Orzo Pesto Tuna Salad

A light, fresh and flavorful salad

Serves Ingredients: 2 pouches (2.5 oz. each) Yellowfin Tuna with Basil Pesto 2 cups cooked orzo ½ cup diced artichokes ½ cup diced sun-dried tomatoes (oil-packed) ¼ cup chopped ripe olives ½ cup mozzarella pearls or diced, fresh mozzarella cheese 6–8 Boston lettuce leaves 2 Tbsp. toasted pine nutsInstructions: In a medium bowl, combine the orzo, artichokes, tomatoes, olives and mozzarella.  Gently toss in the tuna. Line a large bowl with lettuce leaves. Top the leaves with the orzo and tuna mixture. Sprinkle the pine nuts over top.
